A friend of mine gave me some granola and greek yogurt as a thank you treat for babysitting her kids. She knows I can't have desserts, so she was nice and gave me this instead. Normally, I don't like granola in my yogurt. It's not the right consistency for me. But I love this. It's a little chewier than the store stuff, and quite delightful. So here's the recipe:
Delicious Granola
1/4 C Honey
1/2 C Peanut Butter (she uses Adam's crunchy)
1 t vanilla
1 1/2 C Oats
1 C roughly chopped almonds
1/2 C pumpkin and sunflower seeds or craisins or dried fruit. ( I used sunflower seeds and craisins and added some walnuts)
Warm peanut butter and honey. Add vanilla and oats. Take off stove and add nuts and berries. Spread on cookie sheet and sprinkle with cinnamon. Let cool.
*You can do fewer oats and more peanut butter and honey and put in a square pan and bake to make granola bars. My friend eats it as cereal.
