INGREDIENTS:
2 large ripe bananas
1 cup quick oats
*Optional Mix-Ins: chocolate chips, dried cranberries, raisins, cinnamon, pecans, walnuts, vanilla, cinnamon, etc.
All you do is smash the bananas and oats together. Then (if you want) mix in a handful of whatever you feel like- nuts, chocolate, dried fruit, coconut. Just be careful about mixing in too many mix-ins or your cookie won't stay together. If you want to go crazy with the mix-ins just add another banana or even an egg. I love how I can just throw these together without hardly measuring anything. You don't have to add any extra mix-ins but they are way better with them. Plop them down on a greased cookie sheet like normal cookies.
Grease the pan! And bake them for 15 min at 350.
I have also made two ingredient pancakes with 2 eggs and 1 banana. You just smash it all together and cook them in a nonstick pan on a low-medium heat. Spray the pan. Flip them when the edges look cooked. They take a couple of minutes to cook. Keep them small, about the size of your palm. You can also add similar mix-ins to these pancakes as you can to the cookies.
These recipes might not be for everybody, but we think they are pretty good! I also love them because it gives me something else to do with my brown bananas, other than banana bread.

ReplyDeleteThanks for reminding me of these. I made them once (but my chocolate chips were old and they tasted weird) but i need to make them again. I love using coconut in things so I'll try that minus the chocolate i did last time.

ReplyDeleteThis looks awesome! I'm definitely going to try this, I love bananas but I can't stand it if they are even a little bit green. So then I have basically a day or two window before they are too mushy. Josh will eat them in any way, shape, or form. Cool, thanks for the share!
